Fesenjan, chicken in a dark glossy walnut and pomegranate sauce reduced until the walnut oil rises to the surface: pieces of braised chicken thigh submerged in a thick, near black brown sauce, a faint amber sheen of released walnut oil pooling and glistening across the surface.

Fesenjan is not a plateau invention, however often it is treated as the country's signature dish. It is a native Gilani recipe, its name traced to the Gilaki word for grinding walnuts with a stone, and strict Gilani convention holds that the finished sauce should be a genuine deep black, made with a thick, properly sour pomegranate paste rather than a thin commercial syrup.

Serves 4. At least 2 hours, mostly simmering the sauce.

Method

  1. Grind the walnuts fine in a high-power blender, then toast lightly in a dry pan until fragrant.
  2. Simmer slowly with the pomegranate molasses, a little sugar and enough water to loosen the mixture to a pourable sauce, for a minimum of ninety minutes at the barest simmer, stirring often so the ground walnut does not catch on the pan's base.
  3. Add the browned duck, chicken or pheasant and continue simmering until the sauce has darkened toward black and the walnut oil begins to rise and shimmer on the surface.
  4. Serve over plain chelo, without barberries or other garnish competing for attention.

Method

  1. Push the reduction fully to the rung 5 endpoint rather than stopping at merely thick, since an underreduced fesenjan is the single most common failure of the dish outside its home region, sweet and brown rather than dark and integrated.
  2. Strain the finished sauce through a chinois before the meat goes back in, for a genuinely smooth, glossy plate rather than one with visible walnut grit.
  3. Follow Kateh's own documented example and swap the standard chicken for a leaner, more characterful bird, poached pheasant if it can be sourced, or a well-hung duck breast, cooked separately and only finished in the sauce at the end so it does not overcook while the sauce reduces around it.
