Lithuania, and this chapter's own most important debunk: a largely twentieth-century national dish, not an ancient one.
As tradition built it
Makes about 32, serving 16. Potato dough prep about 45 minutes, then the dumplings simmer gently for 25 to 30 minutes.
Ingredients
- roughly 3 parts raw potato, grated
- roughly 1 part potato, cooked and riced
- 800 g minced pork (or curd cheese or mushroom), for the filling
- a little reserved potato starch, added to the cooking water
- 250 g, diced pork belly pork fat, fried, for spirgučiai (to serve)
- 1 onion, fried, for spirgučiai (to serve)
- to serve sour cream, to serve
Method
- Grate raw potato and combine with cooked, riced potato, roughly three to one by volume.
- Let the liquid pressed from the raw grated potato stand until its starch settles out, then pour it off and fold the settled starch back into the dough as the binder.
- Fill with minced pork (or curd cheese or mushroom) and shape into rounded dumplings.
- Add a little of the reserved potato starch to the simmering cooking water to guard against splitting.
- Simmer gently, never at a hard boil.
- Serve with spirgučiai (fried pork fat and onion) and sour cream.
Notes
Genuinely popularised as Lithuania's national dish within roughly forty years of Soviet-era culinary standardisation from 1955, not by centuries of unbroken peasant practice.

Method
- Extract the raw potato starch under vacuum compression rather than simple standing and pouring, for a faster, more complete separation and a firmer, more reliably bound dough.
- Confit the pork filling at a controlled low sous vide temperature before folding it through the dumpling, rendering it more evenly than a raw mince filling.
- Render the spirgučiai fat separately and strain it.
- Finish the plated dish with the crisp solids and a warm emulsified fat sauce built from the rendered liquid and a little of the potato cooking water.
