Method

  1. No source could supply real quantities or a documented traditional method for Yucatán's own taco árabe, a comparatively recent, informal, loosely shawarma-inspired local creation, distinct from Puebla's taco árabe (credited to the Iraqi Tabe and Galiana families, who arrived in the 1920s) and, per Yucatecan food writers themselves, not found in Lebanese cuisine at all. This chapter does not force a Tradition recipe onto it that would misrepresent how thinly attested it actually is.
