As tradition built it

Chilpachole de jaiba

Los Tuxtlas, Sotavento

Ingredients

The method as the tradition gives it, ingredients named but not yet weighed. Quantities follow as we verify them, lead dishes first.

Method

  1. Roast and blend the guajillo chile, tomato, garlic and onion to make the sofrito.
  2. Add crab meat and potato with fish stock.
  3. Finish with epazote. Traditionally made with blue crab, jaiba azul, from Gulf waters, though modern versions substitute fish, shrimp or chicken where crab is scarce or expensive.

Notes

No source found for this chapter confirms the broth is traditionally masa-thickened, despite that being a common assumption about dishes carrying an atole-adjacent name elsewhere in Mexican cooking; the sourced Veracruz recipes describe a chile-tomato broth, not a masa-bound one, and this chapter follows them rather than the assumption.

What a modern chef changes

Comal-toasted base, hand-picked crab

Method

  1. Comal-toast the guajillo chile and tomato hard, on the Big Green Egg's direct heat, before blending, for real Maillard development the simple simmer skips entirely.
  2. Pass the blended base through a chinois for a genuinely silky broth rather than one carrying stray skin and seed.
  3. Pick the crab meat by hand from freshly cooked, whole crab rather than using pre-picked meat.
  4. Fold in a small amount of cold brown butter at the very end, in the spirit of the London kitchen Cometa's own honest reworking of this dish, a technique added on top of a correctly built base rather than a substitution for it.
