Method

  1. Stem the dasheen bush, peel the tough outer fibre from each stem and trim the central rib; judge freshness by whether the stem bends, fresh, or snaps, old and bound to turn the pot bitter.
  2. Simmer 12 young dasheen bush leaves with a quarter cup of pumpkin, 8 okra, 2 cups coconut milk, onion, chive, celery, pimento, thyme and hot pepper together with crab until the leaves collapse; prep 15 minutes, cook 30, serving six. Where fresh crab is unavailable, salted pigtail, simmered 40 minutes first to desalinate and tenderise, is the documented traditional substitute.
  3. Blend or "swizzle" to the diner's preferred consistency.

Method

  1. Roast the crab shells before making the stock, deglaze, and clarify the result through a chinois for a genuinely deeper crab flavour than simmering the shells directly in the pot gives.
  2. Blend the collapsed dasheen bush in a high-power blender, then pass it through the same chinois for a silkier, less fibrous purée than a swizzle stick achieves.
  3. Cook the crab claw meat itself separately, sous vide, and fold it into the finished, blended base only at the point of serving, so it stays properly tender rather than turning stringy through a long simmer.
