Ingredients
- 20 to 25 g ground Robusta coffee
- 100 ml hot water (not boiling)
- 30 ml sweetened condensed milk
- as available ice
Method
- Set the phin filter over a glass, add the ground coffee, and gently press the filter plate onto the grounds.
- Pour roughly 30ml hot water to bloom the grounds, and let it sit around 3 minutes, covered, to hold the temperature steady through the bloom.
- Add a further roughly 50ml hot water and let it drip through fully, 4 to 7 minutes in total.
- Stir the brewed coffee into the condensed milk in a second glass, or pour it directly over the milk and stir to combine.
- Pour over ice.

Method
- Control the water temperature directly, 92 to 98°C, never a rolling boil, which over-extracts and scalds the grounds; a temperature-controlled kettle earns its keep here.
- Use genuine Vietnamese-grown Robusta, not a generic dark roast, since the whole balance depends on Robusta's specific, higher-caffeine bitterness against the condensed milk's sweetness, not simply on "strong coffee."
- Float a spoon of reduced coconut cream over the finished glass, a considered nod to the delta ecology this whole volume sits inside, rather than an invented flourish: coconut belongs on this table even where the coffee itself does not come from anywhere near it.
