Pavlova, a single-layer meringue with a soft marshmallow centre: a wide pale cream meringue disc with a crisp, faintly cracked shell, cut open at the front edge to reveal a soft, marshmallow-white interior.

Serves 8. About 1 hour, plus overnight cooling.

Ingredients

Method

  1. Heat the oven to 150°C.
  2. Beat the egg whites with the salt until stiff.
  3. Add the sugar gradually, beating continuously for around five minutes, until fully dissolved.
  4. Reduce the mixer speed and fold in the vinegar, vanilla and cornflour.
  5. Spread within a marked 20cm circle on baking paper, with a slight central depression.
  6. Bake for 45 minutes, then leave to cool inside the switched-off oven overnight.
  7. Fill with whipped cream and fresh fruit only once fully cool.

Method

  1. Bake the meringue further than tradition allows, toward genuine char at the edges, adding a bitterness the classic pale version never offers. Rung 3.
  2. Pair the burnt sugar note against something bright, acidic and cold, papaya and papaya ice cream in Bayly's version, rather than only sweet cream and soft fruit.
  3. Finish with a savoury fat element, olive oil and a milk crumble, treating the dessert's structure as a plate composition rather than a single iced cake.
