Tater Tot Hot Dish

Ingredients
- 500g minced beef
- 1 onion, diced
- 300g frozen peas and sweetcorn
- 40g butter
- 40g plain flour
- 500ml whole milk
- 100g cheddar, grated
- 800g frozen tater tots
- to taste salt, pepper
Method
- Brown the beef and onion in a wide pan, season with salt and pepper, and spread into a baking dish with the peas and sweetcorn.
- Melt the butter, stir in the flour, and cook for 2 minutes to a pale roux.
- Whisk in the milk gradually, and cook, stirring, until thickened and smooth.
- Stir in half the cheddar, season, and pour over the beef.
- Arrange the tater tots over the top in a single layer, scatter with the remaining cheese, and bake at 200°C for 35 to 40 minutes, until the tots are golden and crisp.
Notes
The everyday version leans on canned condensed soup; a properly built one uses a real béchamel, the same operation the tin is trying to imitate.

- Replace the minced beef with shredded, slow-braised brisket or flank, cooked until fully tender and pulled apart, for a richer, more textured base than mince alone gives.
- Build the béchamel properly from a real roux, cooked out fully before the milk is added gradually, per Rung 5, rather than reaching for a canned soup, and finish it with a good Swiss or Gruyère-style cheese for real depth rather than cheddar alone.
- Press the tater tots into individual moulded cakes over the filling rather than scattering them loosely, for a cleaner, more considered presentation that still delivers the same crisp-topped, creamy-bottomed contrast the tradition depends on.
