The Palenquera cooks of Barranquilla's Barrio Abajo list posta cartagenera among their dishes, and they are the right source; the weights are the Ministry of Culture's for the beef and the panela and the Cartagena restaurant La Jauja's for the rest. A Bogotá butcher chain's blog adds cola and Worcestershire; neither is here, and the sweet drink stays out. Aggregators say the dish is colonial and African in heritage; no source with evidence says so.

What a modern chef changes
The sauce built as a glaze
Rung 5
Method
- Caramelise the panela in the pot first, as the asado negro does, and sear the beef in it.
- Braise at 120 degrees in the oven, covered, 4 hours, which gives the long slow cook without a watched flame.
- Blend the vegetables into the sauce and pass it, then reduce it to a glaze and brush it on the sliced meat under a grill for a minute.
- Serve with the savoury coconut rice, the Tolú one, so the sweetness is only in the meat.
