Method

  1. Cut firm white fish (corvina, lenguado, cabrilla, lorna or chita, or bonito as the everyday substitute) into roughly 1.5 centimetre cubes, cut evenly for uniform curing.
  2. Build the leche de tigre separately: blend fish trim with onion, celery, garlic, ají limo, lime juice, salt and fish stock into a concentrated, cloudy marinade, and use it within two hours of making it.
  3. Cure the fish in the leche de tigre for roughly one to five minutes, enough for a thin cured rim to form while the centre stays raw.
  4. Dress with sliced red onion and plate with choclo and camote.

Notes

Ceviche's own deep history is genuinely contested: archaeological evidence for raw fish eating goes back millennia, but serious academic argument holds the specific dish is a 19th century creation. This chapter states both, attributed, without choosing.

  1. Build the leche de tigre in a high-power blender at exactly the short, high-speed blend the technique calls for.
  2. Hold the discipline of using it within two hours rather than making it ahead, the single change that separates a properly made Lima marinade from a diluted, oxidised stand-in.
  3. Hand-squeeze the limes rather than pressing them, since a press drags bitter pith oil into the juice a real cevichería would never allow through.
  4. Cure the fish for the shorter end of the documented range, watching for the whitish rim rather than timing by the clock, and serve within minutes of dressing.
