Ingredients

Method

  1. Marinate beef heart, sliced thin, in an ají panca aderezo: one version gives, per kilogram of heart, 6 tbsp ají panca paste, 6 tbsp blended garlic, 1 tbsp ají amarillo paste, 1 tbsp black pepper, 1 tbsp oregano, 1.5 tbsp cumin, 100ml vinegar and 100ml vegetable oil, salted to taste, marinated up to twelve hours.
  2. Skewer on cane sticks, traditionally 18 to 20 skewers per kilogram.
  3. Grill hot over charcoal, basting through the cook with the reduced marinade.
  4. Serve with a boiled potato and a piece of corn husk.

Beef heart was historically favoured because, sliced thin and well marinated, its texture and colour most resembled the meat enslaved cooks were denied. Sold from street carts since the colonial period by anticucheras, historically Afro-Peruvian women; the clearest living example today is Grimanesa Vargas, "Tía Grima," who has run her stall and later restaurant near Calle Enrique Palacios in Miraflores for close to fifty years.

Method

  1. Marinate the full documented range, up to twelve hours, in the fridge.
  2. Finish over a Big Green Egg run properly hot for a fast, real char rather than a slow domestic grill's gentle colour.
  3. Baste with the reduced aderezo through the cook exactly as anticucheras always have, brushed on rather than poured.
  4. Dehydrate a portion of the ají panca before it goes into the marinade, then grind it fresh in the spice grinder into a finishing dust for the plate.
