Haudenosaunee White Corn and Bean Soup
Heritage Foods USA, with the Iroquois White Corn Project. 14 hours slow-cooked, or 2 to 2.5 hours simmered.
Ingredients
- 2 cups hulled white corn, already nixtamalised
- 3 cups Anasazi beans
- half a cup onions
- half a cup green peppers
- half a cup mushrooms
- half a cup tomato sauce
- to taste chili powder and spices
Method
- Cook the corn in a 5 quart slow cooker on low for 14 hours, or soak overnight and simmer 2 to 2.5 hours.
- Prepare the beans separately and combine with the corn.
- Sauté the aromatics, onion, green pepper and mushroom, and stir in.
- Finish with tomato sauce, chili powder and spices.
Notes
This chapter states plainly that this specific published version, using canned beans and including green pepper, mushroom and chili powder, reads as a modernised home-cook adaptation of the corn-soup format rather than untouched, pre-contact tradition, and is presented honestly as such.

Method
- Rehydrate a portion of dried Anasazi beans instead of canned, cooked separately and folded in at the end, so the beans hold their own shape against the corn's long braise rather than softening into the same texture as everything else.
- Char the fresh green pepper directly over the Big Green Egg before it is added, a real, controllable way of building a smoke note the slow cooker's own gentle heat cannot give.
- Pass the finished tomato and spice base through a chinois for a cleaner body, leaving the corn's own fourteen-hour softening entirely untouched: that patient, ash-lye-then-long-simmer process is already doing, by hand, exactly what this atlas exists to celebrate.
