Wenchang, Hainan. The mainland ancestor of the diaspora dish already treated in full in AS-45; the chicken, not the rice, is the point.
As tradition built it
Serves 4. 40 minutes.
Ingredients
- 1 whole chicken, small and free-range if possible
- enough to just cover the bird's underside water, to just cover the bird's underside
For the dip
- to taste light soy sauce
- to taste finely chopped ginger and garlic
- to taste salt, sugar, a little oil
- to taste coriander, lime juice
Method
- Lower the whole chicken into a pot with water levelled to just cover its underside and hindquarters, legs resting over the rim if needed.
- Bring to a gentle simmer, never a rolling boil, and poach through, turning occasionally so it cooks evenly.
- Lift and cool fully before cutting into pieces, then reassemble the pieces into the shape of the whole bird on the serving plate, following the traditional presentation.
- For the dip, combine light soy sauce with finely chopped ginger and garlic, salt, sugar, a little oil, coriander and lime juice; there is no single fixed ratio in the sources for this, and the balance is judged to taste, sharp and fragrant rather than sweet.
- Serve the reassembled chicken at room temperature with the dip alongside. Rice is not the centrepiece of this dish on Hainan, and this recipe does not build a fried-rice course around it in the diaspora style; that dish belongs to AS-45.

Method
- Poach in a temperature-controlled water bath at a gentle simmer equivalent, monitored by probe, rather than by eye, cooking to a precise internal temperature before cooling.
- Cool the cooked bird under running cold water rather than at room temperature, firming the skin somewhat in the spirit of Rung 4, though Hainan's own tradition does not use a full ice shock the way baiqie gai does, and this version keeps that distinction honest rather than importing the mainland technique wholesale.
- Reassemble the bird exactly as tradition presents it: the presentation is part of the dish, not a garnish to be modernised away.
