Tyrol. Alpine peasant thrift cooking, using up stale bread and strong mountain cheese always on hand at a farm or alm hut. North and South Tyrol classically use Graukäse; Salzburg and Pinzgau use Bierkäse instead, a genuine regional variant worth knowing rather than treating as one fixed recipe.

Ingredients
- 300 g stale white bread, cubed
- 150 ml warm milk
- 150 g Graukäse (or Bierkäse), grated or crumbled
- 1 small onion, finely chopped and softened in butter
- 2 eggs
- a small bunch chives, chopped; salt, pepper and a pinch of nutmeg, to taste chives, salt, pepper, nutmeg
- a little, for shaping flour, for shaping
- a generous knob, for frying butter, for frying
Method
- Soak the bread cubes in the warm milk until softened, around 10 minutes.
- Mix in the cheese, softened onion, eggs, chives and seasoning. Bring together into a firm dough, adding a little flour if too wet.
- Shape into flattened, palm-sized patties.
- Fry in butter over medium heat until crisp and golden on both sides, the centre molten.
- Serve in hot beef broth, or over a bed of young salad leaves, spinach, chard, rocket, in the lighter modern style.

Method
- Chill the shaped patties fully, at least an hour, before frying, firming the dough so the exterior can develop real colour and crust in the pan before the centre has time to overheat and turn stringy, a genuine improvement over frying straight from mixing.
- Finish the fry in browned butter rather than plain butter, letting the milk solids carry past melting into genuine Maillard colour before the patties go in, so the crust itself picks up a nutty depth that plain butter cannot give, directly applying Rung 6's mechanism here rather than only at the very end as in Kasnudeln below.
- Serve over the salad-leaf bed with a light dressing built from the same browned butter, cooled and emulsified with a little vinegar and mustard, rather than a plain oil dressing, tying the dumpling and its accompaniment together with one consistent flavour rather than two unrelated ones.
