The classical yeasted method builds an opara first, and the widespread assumption that "authentic" Russian blini are buckwheat does not survive checking.

Ingredients
- 250 ml warm water, about 36°C
- 20 g fresh yeast yeast
- 500 g, divided plain wheat flour, divided
- 400 ml milk
- 2, plus 3 extra yolks eggs, yolks and whites separated
Method
- Make an opara first: warm water to roughly 36°C to bloom the yeast, rest 15 minutes, then combine with half the flour and leave in a warm place for around an hour.
- Fold in the remaining milk, flour and egg yolks, with the whites reserved and folded in last.
- Knead by hand at least 10 minutes, then cover and prove a further hour minimum in a warm place before cooking.
Notes
The widespread assumption that "authentic" Russian blini are buckwheat does not survive checking: buckwheat itself was not grown at scale until the sixteenth century, and buckwheat blini, once established, were made both with and without yeast, denser and more porous than the lacy wheat version, with a distinctly earthy flavour.
