Ingredients

Method

  1. Cook pulaka until fully tender, then pound or mash to a smooth pulp.
  2. Work coconut cream through the pulp until evenly combined.
  3. Serve warm, the dish's consistency and sweetness varying by island tradition.

What a modern chef changes

This chapter's own technique work, since no chef-driven precedent for tulolo was found anywhere in this research, Tuvalu having no diaspora restaurant scene documented at all.

Method

  1. Steam the pulaka in a combi oven or steam-set Big Green Egg rather than an open pot, for a more even, predictable set through a genuinely dense root.
  2. Purée in a high power blender rather than hand pounding, for a smoother, more homogeneous pulp achievable in a fraction of the time.
  3. Fold the coconut cream through in two stages, a portion worked in while the pulp is still hot for absorption, a second portion folded in just before serving for a fresher dairy-fat top note.
