Standard, uncontroversial sushi construction; the origin story is contested
Ingredients
For the rice seasoning
- 3 parts rice vinegar
- 2 parts sugar
- 1 part salt
For the roll
- about 120g (heaped 1/2 cup), per roll short grain rice, cooked and warm
- 1/2 sheet, per roll nori sheets
- 2 to 3 sticks, or a small handful of picked crab, per roll crab meat or crab stick
- a quarter, sliced, per roll avocado
- a few batons, per roll cucumber
Method
- Dissolve the rice vinegar, sugar and salt mixture and fold it through the hot cooked rice while it is still warm, fanning it to cool.
- Lay a sheet of nori on a bamboo mat, press the rice evenly over its surface and flip it rice-side down.
- Lay crab meat or crab stick, avocado and cucumber across the centre.
- Roll tight with the mat, then slice with a wet, sharp knife into even pieces.
Notes
The most widely repeated account credits chef Ichiro Mashita at Tokyo Kaikan with creating the roll in the 1960s, substituting avocado for fatty tuna when supply ran inconsistent; this chapter states plainly that Los Angeles fish markets by the 1960s had reliable year-round tuna supply, which undercuts the specific detail even though the broader claim of Mashita's restaurant popularising the format is not itself disproven.
A rival named claimant is Ken Seusa at Kin Jo near Hollywood, and Vancouver-based chef Hidekazu Tojo separately and assertively claims sole credit for inventing inside-out sushi itself in the 1970s, saying he originally called it "Tojo-maki".

Cured crab and calibrated seasoning
Ingredients
- white and black sesame seeds, toasted
- salt and citrus zest, for curing the crab
Method
- Cure the crab meat, if using real Dungeness rather than crab stick, briefly with a light salt and citrus zest mixture before assembly.
- Press the rice with an even, calibrated hand, a chinois-strained rice vinegar seasoning liquid poured through in a thin, even stream rather than stirred roughly through the pot.
- Toast a portion of white and black sesame seeds and grind half of them coarsely in a spice grinder, pressed into the exterior rice layer for texture and a toasted note.
