- Researched from 66 sources in the brief
A whole pig, rubbed inside and out with rock salt, hot stones placed in its own body cavity to cook it from the inside, wrapped in ti or banana leaf and lowered onto a stone-lined, kiawe-fired pit, then buried under more leaf and soil for six to ten hours. The fullest technical account of pit construction found in this research comes from a general wilderness-skills source rather than a Hawaiian-authored one; the broad shape is corroborated by Native Hawaiian chef Sheldon Simeon's own published account.
As tradition built it
Serves 8 to 10. About 6 to 8 hours in a home oven (6 to 10 hours in a true imu); the honest domestic version below uses a low oven and liquid smoke or genuine wood smoke in its place.
Ingredients
- 2 kg boneless pork shoulder
- 2 tbsp alaea salt
- enough to wrap generously banana leaves, enough to wrap generously
- as needed, for a 6 to 8 hour smoke kiawe wood chunks, or mesquite as an honest substitute
Method
- Rub the pork all over with the salt.
- Wrap tightly in banana leaf, several layers.
- In a true imu: lay the wrapped pork onto the hot, kiawe-heated, leaf-covered stones, seal the pit with more leaves and soil, and leave 6 to 10 hours.
- At home: place the wrapped pork in a low oven, around 120°C for 6 to 8 hours, until the meat pulls apart easily, then shred.
What a modern chef changes
Kiawe treated as a genuine sourced ingredient rather than a generic wood-smoke gesture, and the low, slow interior separated from the smoke event entirely.
Rungs 2 and 5
Method
- Smoke on a Big Green Egg run low, around 110 to 120°C, using genuine kiawe wood chunks ordered in specifically, not mesquite chips as a casual stand-in, for the specific flavour that reads as Hawaiian rather than generically barbecued.
- Wrap in banana leaf partway through the cook rather than for the whole duration, giving the meat direct smoke exposure early, then the leaf's steaming, aromatic effect for the back half, an approximation of the imu's two simultaneous mechanisms rather than one continuous method.
- State this plainly to the reader: this reconstructs the imu's heat and smoke character; it does not reproduce a stone pit's scale or its communal, hours-long social event, and no Big Green Egg, however large, changes that.
