Since 2021 halloumi has held EU PDO status: to be sold as halloumi in the EU it must be made in Cyprus, to the traditional method, with at least 51 per cent sheep's or goat's milk.

Method

  1. Cut into slices roughly finger-thick. A slice cut too thin loses its structure as it softens over heat.
  2. Brush lightly with olive oil.
  3. Grill over direct high heat, or in a dry hot pan, 1 to 2 minutes a side, until deeply marked and golden.
  4. Serve the moment it comes off the heat, with a lemon wedge. Halloumi firms and toughens again rapidly as it cools.

Method

  1. Understand what you are cooking. The curd is heat-set in its own whey before it ever reaches the grill, which is why it holds shape rather than melting; treating this as a fact about the ingredient, not a lucky trick, changes how confidently you can push the heat.
  2. Get the grill genuinely hot before the cheese goes on. A tentative, moderate heat gives colour slowly and lets the cheese soften too far before it browns; a hard, fast sear on real heat gives the contrast of a crisp, charred surface against a still-firm interior.
  3. Plate and serve within seconds, not minutes. Have the lemon and everything else ready before the cheese comes off the heat, since this dish has almost no holding window at all.
