Buchada de bode

Serves 6 . 1½ to 2 hours simmering (or about 1 hour under pressure), plus preparation

Ingredients

An outline, not yet a recipe: the tradition's method with its ingredients named but not weighed. Quantities are being added from sources inside the tradition, lead dishes first.

Method

  1. Wash the goat's stomach repeatedly under running water, scrubbing with lime and vinegar and resting, repeating the cycle until any odour is gone.
  2. Season the offal, liver, heart, kidneys, lungs and intestine, with garlic, onion, cumin, chilli, salt and coriander, and rest for half an hour.
  3. Pack the seasoned offal back into the cleaned stomach and sew the opening shut.
  4. Simmer with bay leaf for an hour and a half to two hours, or under pressure for closer to an hour.
  5. Serve with rice, farofa and pirão, the porridge-like cassava thickener made from the cooking liquid itself.

Method

  1. Keep the lime-and-vinegar cleaning cycle as tradition dictates, since it is genuine offal chemistry, acid and salt denaturing surface protein and lifting odour.
  2. Poach the cleaned, stuffed stomach at a controlled 82°C in a water bath for several hours, removing the real risk of scorching or drying that an unattended stovetop pot carries over that length of time.
  3. Finish briefly over hot coals for colour and a little smoke before serving.
