Ingredients
- about 500g per person beef (asado cuts), skewered upright around the fire (mbichy / asado a la estaca)
- as available boiled and salted mandioca (cassava), always present
- as available achuras (offal), with molleja (sweetbread) singled out as the most prized cut
- as available tomato, onion and lettuce salad, or ensalada rusa
- as available sopa paraguaya or chipa guasu, served as part of the same table
Method
- Skewer the beef upright around a fire built to one side, not under it, in the mbichy or asado a la estaca method.
- Cook by radiant and indirect heat over three to five hours.
- Cook well past the "crudo" point standard in Argentina, to "cocinado-jugoso": cooked through and juicy, no visible blood, still moist.
- Serve the mandioca, achuras, salad and sopa paraguaya or chipa guasu as structural parts of the same table, not as optional side dishes.
Notes
The single most specific, well sourced difference from Argentine asado is doneness, per New Worlder and Difusión Empresarial: a tourist-facing asado that serves only grilled beef and skips the mandioca, achuras and starch breads is missing structural elements of the dish, not just side dishes.

Method
- Configure the Egg for genuine indirect heat, deflector plate in, fire banked low and stable, and cook over a long, slow window closer to mbichy's three to five hours than a quick direct sear, understanding this as a return to the pre-colonial Guaraní method rather than an import of American low-and-slow barbecue technique. Rung 4.
- Hold the target doneness deliberately rather than by instinct, since a cook trained on Argentine or British steak norms will pull the meat too early for this dish; cocinado-jugoso, cooked through with no visible blood but still moist, is the correct end point, not a compromise on the way to it.
- Serve the full structural set, mandioca, achuras, sopa paraguaya or chipa guasu, on the same table rather than treating the beef as the whole meal.
