Toulouse's version is built on pork, confit duck and Toulouse sausage, without the goose Castelnaudary adds or the tomato that marks out Carcassonne's. The modern town rivalry dates only to an 1890 newspaper article; Prosper Montagné's 1929 formulation, Castelnaudary the Father, Carcassonne the Son, Toulouse the Holy Spirit, is the dispute's most quoted line, not a resolution of it.

Serves 4. About 4 hours, plus overnight soaking.
Ingredients
- 500 g haricot tarbais beans, soaked overnight
- 450 g salted pork, ham hock or belly with rind
- 2, halved duck confit legs
- 320 g Toulouse sausage, fresh, coarsely chopped, unsmoked
- 2 carrots
- 3 cloves garlic
- 2 onions, one studded with cloves
- 1 tbsp tomato paste
- 1 sprig thyme
- 2 bay leaves
- 1 to 2 tbsp duck fat
Method
- Blanch the soaked haricot tarbais beans.
- Brown the pork or ham hock with carrot, onion and garlic in duck fat.
- Add the clove-studded onion, thyme and bay, beans and tomato paste, cover with roughly 3 litres water, simmer about 2.5 hours until the beans are tender.
- Transfer to an earthenware dish, top with the confit duck and the Toulouse sausage, seared whole and unpierced so it renders its own fat.
- Bake about 1.5 hours at high heat, breaking and pushing the crust back into the beans repeatedly, per Rung 5.

Method
- Set a timer to break the crust at fixed, even intervals through the bake, roughly every 12 to 15 minutes, rather than checking whenever it happens to be convenient, so every crust gets a genuinely equal number of re-formations.
- Cook the confit and the sausage separately from the bean pot until the final assembly, so the sausage's fat renders on its own terms rather than partly steaming inside the beans.
- Finish with a spoonful of the reserved confit fat brushed over the final crust before its last few minutes, a small, named departure that deepens the crust's own flavour without changing the dish's structure.
